I use NJ for meeting notes. Considering that most meetings are now online, I take screenshots all the time (adding them to my notes).

While I can leave those notes as screengrabs, what would be great is to click the image, then click a button to 'replace with text'. The image could be removed, and replaced with unformatted extracted text (saving storage space for user and NJ server).

Enterprise Onenote has the ability to 'copy text from image, but your tool could go one step further (actually replace the image with the text)... user could undo the replace action if they still want to retain the image (with extracted text remaining on clipboard).
